Spicy Nuts

4 tablespoons butter

3 tablespoons maple syrup

3 tablespoons dark brown sugar

3 thin slice fresh ginger

1 teaspoon ground ginger

½ teaspoon of another spice (your choice)

1 teaspoon kosher salt

¼ teaspoon cayenne pepper

1 pound pecans, almonds or walnuts

Preheat oven to 300 degrees

Combine butter, syrup, brown sugar, ginger, ground ginger,

salt and cayenne in a small saucepan and simmer over low heat for 3 minutes, stiring often.  Place the nuts in a bowl and pour the glaze through a strainer into the bowl.  Toss the nuts to coat them evenly with the glaze.  Spread the nuts in a single layer on a silpat lined baking sheet and bake for about 30 minutes (CHECK TIME) stirring after 15 minutes until the nuts are lightly browned and dry.  Slide the nuts off the silpat onto a rack to cool completely.  Store in an airtight container at room temperature or in the freezer for up to one month.
